The nice and light tiramisu is a great dessert to make for just yourself and your family, or to serve when you are having dinner guests over. It will be a hit with everyone.
Ingredients List:
½ cup of sugar
1 cup of nonfat cottage cheese
1 cup of nonfat sour cream
2 tbsp of dark rum
1 8 ounce package of light cream cheese
1 ¼ cups of hot water
1 ¼ tbsp of instant espresso coffee granules
40 ladyfingers
½ tsp of unsweetened cocoa
Directions:
The first thing you want to do is to mix the sugar, cottage cheese, sour cream, dark rum, and cream cheese in a food processer until they are smooth. Then you will combine the hot water and espresso granules together. Take 20 of your ladyfingers and cut them in half lengthwise. You want to dip the ladyfingers quickly into the espresso and place them dipped side down into the bottom of a 9 inch square shaped baking dish. Now you are going to dip 20 more ladyfinger halves into the espresso and arrange them dipped side down on top of the other ladyfingers. Spread 2 cups of your cheese mixture on top of the ladyfingers; make sure that you spread the mixture evenly. Once you are done with these steps you are going to repeat the entire process over again until you have used up all of the ingredients. Cover the entire dessert with plastic wrap and place it in the refrigerator to chill. You will leave it in there to chill for about 4 to 8 hours. After it is chilled then you can sprinkle cocoa over the top of it and it will be ready for you to serve. You can also add your own personal touch to this dessert by adding some fresh fruit around it, or sprinkling on some cinnamon. If you have been looking for a dessert that everyone will love and can enjoy guilt free, then this is the one for you!
